Dill-icious Poached Fish

This happens to be one of my favorite Spring time fish recipes. It works for about any type of fish and is a good "clean out the freezer" recipe. As we all prepare for a bountiful harvest this season, thaw some fish, make some room in your freezer and keep cool with this simple recipe.

Place steaks, with skin on, in a pot or sauce pan. Combine 2 parts water to 1 part vinegar until you have enough to reach about 1/2 way the fish steaks. Add a dash of salt. Heat to poach, over medium high heat. Poach for 8-10 minutes. While fish is poaching, use a small bowl to combine 3 chopped scallions, 1-2 teaspoons of fresh dill ( 1/2 teaspoon of dried dill), another dash of salt, a squirt of lemon juice and a drizzle of olive oil. Stir until mixed well.

Once fish is done, remove skin and place fish on plates. Serve herb mixture over fish and Enjoy!

Now for the best part. Take any left over fish and flake into a bowl. Pour any leftover herb mixture into flaked fish. Mix more if needed. Add just enough mayonnaise or plain yogurt to blend into a salad. This salad is GREAT on crackers or served with raw vegetables.
